If I go to a breakfast spot- biscuits and gravy is my go-to, as it is not usually something I make at home, and I LOVE it!
So..... I decided to take on the challenge of figuring out how to "Nutrish-it" and make it myself! It took a few tries, but got there, with a super tasty result! Though I can't say this is exactly a low-calorie dish, it is certainly a far more heart healthy and lower calorie recipe than classic biscuits and gravy.
Biscuits
As I am not much of a baker, I used the classic Bisquick drop biscuit recipe ( on the box), but used the "Heart Smart" Bisquick. Turned out great and SUPER easy!
Turkey Sausage Gravy
For 2 cups of gravy, Cook and brown 1/2 lb turkey sausage
Once cooked through, remove from pan
Using the same pan ( want to get all the flavor of the sausage in the gravy) Reduce heat to mid-low, and make your rue- I used vegan butter to reduce cholesterol and eliminate saturated fat while adding "good fats".
4 tablespoons vegan butter, 4 tablespoon flour- add one tablespoon of flour at a time and keep stirring for a smooth gravy
Once your rue is formed, add 1/2 cup chicken stock or broth- keep stirring!
Add 1 1/2 cup skim or 2% milk-again stir, stir, stir as your gravy thickens on a low bubbly simmer
Add, a couple shakes of garlic salt, and then salt and pepper to taste- I like a peppery gravy, so added a few extra shakes of pepper.
After your gravy has started thickening, add back your cooked turkey sausage and mix it in, letting it simmer for about 3-5 minutes, till your gravy is at your desired consistency. Remove from heat.
That is it! Cut your biscuit in half and top with your gravy. I served with blackberries for a fresh and high fiber side- PERFECT!
