We LOVE Mexican food and burrito bowls are a great fresh-mex option- keeping all the flavors you love and making a great nutritional meal- Win/Win for me. Burrito bowls can include anything you like- make vegetarian/vegan or feel free to add your favorite protein- shrimp, fish, chicken, steak - all amazing adds. Rice would also be great! Really is extremely versatile, and very few "must have" ingredients, so easy to make with what you have.
Cook your black beans, or you can heat up canned black or pinto beans. InstaPot Black Beans (cookingnutrish.com). Can definitely be made ahead and heated up for this dish.
Prepare your pico de gallo - Pico de Gallo (cookingnutrish.com) such a great topping! But use whatever may be your favorite salsa. Again, can be made ahead.
Slice your favorite veggies and sauté in a pan with a bit of avocado oil, salt and lime juice. I used green bell peppers and red onions- but corn, mushrooms, squash all great options.
Add your beans to a bowl and top with the veggies.
Now time for the best part- TOPPINGS! Here are some options:
Chopped lettuce
Avocado
Shredded Cheese
Sour Cream/plain yogurt (I use fat free)
Pickled Jalapenos
Pico de Gallo and/or salsa
Pickled Onions
Cilantro
Cabbage
Radishes
Black Olives
Roasted Green Chilies
I like to eat with multi-grain tortilla chips, but great without too!
