One of my favorite meals- this is a copycat recipe of PF Changs amazing lettuce wraps with delicious Miso Soup. My dear friend made this when we went to a cabin together over the holidays (which hit the spot!) and shared the recipes with me. So yummy and the kids love it as much as the adults! I have made lettuce wraps before with other recipes, but this recipe is far simpler, and less time consuming to prepare- and just as tasty- so WINNER!
Both can be prepared simultaneously for a tasty dinner in 45 minutes or less.
Lettuce Wraps
Here is the recipe- I love the water chestnuts for some extra texture, and diced shiitake mushrooms are a great addition as well, but of course optional based on your taste. I also like to add about 2 tsp sesame oil to the glaze mixture. Siracha or Garlic Chili Sauce on each wrap is a great add for a bit of heat. For Vegetarians- could easily substitute tofu for the ground chicken or turkey.
This time I used romaine lettuce vs the butter lettuce, both are great- use what you have.
Miso Soup
This is legit- my daughter literally thought I had ordered delivery!
I made a simplified and quick version of this recipe- using just chicken stock (broth works too) instead of making dashi, and then added red miso, tofu and green onions.
I doubled the recipe for our family of 3, and we had some leftovers which were eaten the next day- we are all big fans of Miso Soup!
I really like adding some additional green onions on top when serving for texture and flavor.
Great additional side dish is steamed edamame tossed in sea salt- YUM! Can also sauté in garlic and sesame oil for an extra zing.
