Chicken Philly Sandwiches

I LOVE a good philly cheese steak- and it was actually one of the first things I ever learned to cook at my first job at age 15. Super simple, and a great "feels like a cheat" meal, but it is not! This version replaces the classic steak with chicken breast, I skipped the mayo, as I am not a fan, but you could definitely, add a bit of your favorite. I served on Dave's Killer Buns- so good!

  • Heat a pan on medium heat.

  • Prepare your chosen veggies- I used sweet bell peppers, red onion, mushrooms, and poblano pepper (not spicy).

  • Cube your chicken breast into small cubes.

  • Add a bit of your favorite cooking oil to the pan, I used avocado oil.

  • Add the cubed chicken and season with garlic salt, black pepper, and 3 or 4 shakes of Worchester sauce.

Cooked chicken till slightly browned, stirring to brown all sides. Once cooked about 50% through, add peppers and onions and sauté for a few minutes till peppers start to soften.

  • Add your mushrooms, add a bit more oil/spray oil if needed, and another 2 shakes of Worchester sauce, and sauté for a few minutes till mushrooms are cooked and softened, and chicken is cooked all the way through.

  • Sprinkle with part skim shredded mozzarella cheese, remove pan from heat, and cover with a lid to melt the cheese.

And you are ready to serve- easy peasy! Assemble your sandwiches with your favorite bread or bun. If you like a little spice, like we do, pickled jalapenos, or a bit of wing sauce, are great toppings. I served with a simple spinach salad.
