Cilantro Jalapeño Hummus

Hummus is one of my favorite snacks. This is my version of one of my favorites from Pita Jungle - Cilantro Jalapeno Hummus. A little kick of spicy from the fresh jalapeno and a great herbaceous pop from the cilantro, with all the creaminess of hummus- so good.

Cilantro Jalapeno Hummus

You will need a strong blender or food processor- I prefer a blender for this- but either one works great!

  • 2 cans of chickpeas peas/garbanzo beans - drain 1 can, use with liquid for the 2nd.

  • Garlic - 2 cloves

  • Tahini - 1/4 cup

  • Lemon- 1-2 - depending on size- about 1/4 cup

  • Cilantro- 1/2 bunch

  • Jalapeño- 1-2 - depending how much spicy you like

  • Olive oil - (drizzle in while blending- about 2 tablespoons)

  • Salt to taste

Add all ingredients to the blender - Blend it up, that is it! Remember to add the olive oil during blending, really helps make a smooth hummus.

If you prefer regular hummus- everything stays the same- just leave out the cilantro and jalapenos.

I like to let it sit in the fridge for at 30 minutes before serving as the flavors really come together. You can also top with a bit of extra olive oil.

I love a bit of pico de gallo or salsa on the top. Serve with your favorite pita or tortilla chips are also great! Also makes a delicious and unique spread for sandwiches or burgers.
