Obsessed! SO tasty, and EASY! This is a flavor packed vegan appetizer, side dish, or main course, and can easily satisfy any buffalo wing cravings you may have ( I LOVE buffalo wings), without all the grease, fat and cholesterol.
A few weeks ago, I went to a restaurant, The Porch, that offered buffalo cauliflower and we loved it, so I took a pic, and today I tried to re-create it. The restaurant serves it with chopped up celery, I didn't have any on hand so used carrots. I loved the celery, and loved the carrots, and next time will do a bit of both! In addition, the restaurant drizzled vegan ranch on it which was tasty. I didn't add any ranch, but definitely an option to consider.
Pre Heat oven to 400
Cut a head of cauliflower into smaller pieces- but not too small as you will be roasting them in the oven. Lay the pieces in a single layer on an oven safe pan.
Coat the cauliflower pieces in your favorite cooking oil, I used Avocado oil,
Season to taste with salt and pepper and toss them a bit.
Put in the pre-heated oven and roast for 20-30 minutes, turning the cauliflower halfway.
Mix up your favorite sauce. I used Franks Red Hot mixed with Nando's Peri-Peri for some deeper flavor and more heat. You could definitely just use Franks alone, or really any sauce you love - BBQ Sauce mixed with Franks, Asian Sweet Chili Sauce, lots of options!
Cut up your carrots and/or celery, as well as a bit of chives/green onion for garnish.
When the cauliflower is finished roasting, put into a mixing bowl, pour on your desired amount of your sauce and toss the cauliflower in the sauce.
Add back on your roasting pan or another serving dish, and sprinkle the carrots and/or celery pieces on top and toss with the cauliflower, then sprinkle the chives/green onion on top. Here is when you can also drizzle ranch, or put ranch on the side for dipping.
Ready to serve and enjoy!
