Egg White, Turkey Bacon & Vegetable Frittata


I love a tasty savory breakfast, and this dish hits the spot! It gives you all the fuel you need for the day- packed with protein, vitamins and nutrients-...and flavor! Don't let the term frittata scare you- it is just a baked omelet, and super easy to make! This dish is a great option for a weekend breakfast, brunch or meal prep.


Egg White Frittata

  1. Pre-Heat your oven to 400 degrees

  2. Prepare the Frittata mixture:

Clean and chop your vegetables and meat: There are a lot of options here, so you use all your favorites!

  • I chose:

    • 2 small sweet potatoes diced- or one large

    • 1/2 red onion diced

    • baby bell peppers- about 4-5 chopped

    • 2 large handfuls of chopped kale

    • 6 mushrooms sliced

    • 3 pieces of turkey bacon sliced into small squares.

3. Sautee your mixture:

Heat a sauté pan on medium heat and add 2 small pats of vegan butter.

  • First add your sweet potatoes to the pan and sauté for a few minutes, as they take a bit longer to cook.

  • Next add the onions, bell peppers, kale and turkey bacon, spray with your favorite cooking oil, and salt and pepper to taste, and continue to sauté.

  • When the sweet potatoes and veggies are softened, add the mushrooms and sauté till softened.

4. Spray a baking dish on the bottom and sides with your favorite cooking oil.

5. Remove the mixture from the pan and add to the baking dish

6. Pour egg whites over the mixture, till it just covers the top of the mixture.

7. Sprinkle a handful of shredded mozzarella or your favorite cheese on top

8. Bake in the pre-heated over for 10-15 minutes, till eggs are cooked fully.

9. Remove from oven and let rest for 5 minutes.

Once rested, you are ready to slice, serve, and enjoy!
