Feta and Spinach Turkey Meatballs


Okay....these are amazing and a new household favorite! These "Greek meatballs" are simple to make, and full of flavor. AND... you may think turkey meatballs can be dry- these are not due to the secret ingredient of fat free Greek yogurt! Nutritious add, that also keeps the meatballs super moist. Spinach is optional- but great way to add some veggies and flavor- could also sub for another green like kale or chard. For me the feta is a must, but still, lots of flavor in the herbs, spices and yogurt without it- so if it is not your thing, leave it out. I served with a greekish salad (added feta and kalamata olives to field greens, onion, red peppers, and tomatoes), pan roasted potatoes, carrots, and brussel sprouts seasoned with salt, pepper and a bit of sumac. I also made this dill & tahini dressing/sauce to drizzle over it all, and it was delicious, but definitely optional. You can make the dressing ahead and store in the fridge to use all week.


Feta & Spinach Turkey Meatballs:


1.Prep your ingredients & Pre-Heat the oven to 400 degrees:

  • 2 cups baby spinach- add 1 tablespoon olive oil to a sauté pan on medium and wilt for a couple of minutes and set aside

  • 1/2 large onion- dice finely

  • 3-4 garlic cloves minced

  • 1/2 cup chopped fresh parsley

  • 1 tablespoon chopped fresh mint (or sub for dried)

2. Make the meatball mixture. In a medium bowl, add the following and incorporate all ingredients together:

  • 1.5 pounds of ground turkey

  • 3/4 cup of fat free Greek Yogurt

  • 3/4 cup feta cheese

  • Add your chopped wilted spinach, diced onion, minced garlic, chopped parsley and chopped mint.

  • Salt and Pepper

3. Form the mixture into balls (about the size of a golf ball), and place on a lighlty oiled sheet pan.


4. Bake for approximately 25 minutes at 400 degrees. Once cooked through, let the meatballs rest for a couple of minutes, and then you are ready to serve!

Note: I was really light on the salt in the mixture, as I knew the feta is salty. I did find that the meatballs needed a bit more salt, so just sprinkled a bit of salt on the cooked meatballs, and it was perfect.
