Hot and Sour Soup & Cauliflower Fried Rice

This hot and sour soup was one of the first dishes I made in my journey to eat healthier. It is also the number one craving that would send me to ordering Chinese food delivery. This recipe tastes just like from your favorite restaurant!


I follow the recipe below pretty much to the "T" but I like both hot and sour, so doubled the amounts for both (rice vinegar and chili garlic sauce). I also love the bamboo shoots- they add great texture (and fiber). In addition, I usually add shrimp to the soup, but totally optional.


This was the first time I made the cauliflower fried rice- and so glad I did! I made just how I would normally make fried rice, but substituted butter for vegan butter, and white rice for cauliflower rice. So yummy!


Fried Cauliflower Rice

  • In a large sauté pan or wok, add a little bit of your chosen oil. Add a bag of frozen cauliflower rice, and about 1/4 quarter bag of frozen peas and carrots and sauté on medium heat.

  • Season with garlic salt and a little pepper, and a drizzle with soy sauce.

  • In a separate small fry pan, scramble and cook 2-3 eggs.

  • Add scrambled eggs to the cauliflower rice.

  • Add 1-2 small pieces of vegan butter and sauté everything together for a couple of minutes.

  • Add diced green onion just add the end and sauté for about a minute

  • Ready to serve and enjoy!


Hot and Sour Soup

I recommend cooking per the recipe, and then tweak from there for your taste with any additional salt, rice vinegar, and/or chili garlic sauce.

Also, if you do add shrimp, add raw shrimp, when the soup is done cooking, and you turn off the heat. The broth is still very hot and the shrimp cooks quick in the hot soup without over cooking.
