InstaPot Barbacoa with Roasted Sweet Potatoes


Have to say, this is just delicious! I looked at several recipes, knowing this is one of our favorite Mexican dishes, and was able to keep all the flavor, and lose much of the ”bad” fat and cholesterol. You can pair more traditionally with rice and/or beans- but sweet potatoes are a fun and nutritious alternative to the norm, and new take on meat and potatoes.

Make your Broth/Sauce:

  • 5 cloves garlic

  • 1/2 medium onion

  • Juice of 1 Lime

  • 2-4 tbsp chipotles in adobo sauce, to taste

  • 1 tbsp ground cumin

  • 1 tbsp oregano

  • 1 tbsp chili powder

  • 2 cups beef broth

Place garlic, onion, lime juice, cumin, oregano, chipotles, chili powder and beef broth in a blender and puree until smooth.

Sear the Meat and Prep to Pressure Cook:

Cut your beef eye of round roast into 3 inch thick pieces, and trim all fat. I used about a 3 lb loin. Add a bit of avocado oil, or your favorite cooking oil to your Insta Pot, and set to sauté, and season the meat with salt and pepper. Brown the meat on all sides- takes about 5-7 minutes.

  • Once browned, add blended sauce to the Insta-Pot on top of the browned meat

  • Add 1 tsp crushed bay leaves

  • Set InstaPot Meat/Pressure Cook for 50 minutes on high.

  • Once done, shred meat with tongs or forks- it will be super tender and fall apart!


Roasted Sweet Potatoes with Green Peppers:

Though sweet potatoes are definitely not the traditional side for barbacoa- they are a great and nutritious pair! Adding some paprika gives them a nice smokey flavor that is the perfect combo with the barbacoa.

  • Heat oven to 425.

  • Prepare your sweet potatoes, and dice into larger pieces for roasting.

  • Chop Green Pepper into large cubes

  • Season with Salt, Pepper, and Paprika

  • Spray/coat with Avocado oil.

  • Roast on a cookie sheet/pan till tender- about 20 minutes.



I served with cabbage, a bit of cilantro, cucumber slices, lime, and of course hubby and I added a bit more spice with hot sauce ;) Was a family favorite, and great on the reheat for lunches.
