InstaPot Black Beans

A staple at my house. Tasty side or main component for burritos/burrito bowls, taco salad, or whatever you can think of!




  • Rinse one bag of dried black beans in a colander

  • Add beans to the InstaPot with 1 Quart (4 Cups) Chicken/Veggie stock, and 2 cups of water (or do all stock or broth)- can use just water (6 cups of fluid total), but adding some broth adds a deeper flavor.

  • Chop 1/2 an onion and 1/2 bunch of cilantro and add to the pot.

  • Add 2 cans of stewed tomatoes with green chilies and cilantro (I like Rotel)

  • Season with Garlic Salt and Chili Powder

  • I like to add a can of green chilies or finely chopped fresh jalapenos

  • Drizzle with avocado oil, or your favorite oil


  • Mix all together and set InstaPot on bean setting for 25 minutes.

  • Check to make sure beans are soft- if not can do a few more minutes of pressure cooking, or if time allows, set to slow cook setting to both soften the beans and richen the flavor.

  • Taste before serving to see if additional salt is needed, if so add a bit of sea salt.

  • Serve as is, or top as you like- we like diced avocado, and/or a bit of fat free sour cream.
