Miso Ramen


Miso Ramen
For all my fellow ramen lovers out there- this is a simple, quick and easy recipe, for a delicious make -at -home perfect bowl of ramen. One of my favorite things about ramen night, is it is a great way to use all those random veggies and proteins you may have in the fridge, and everyone can customize their own bowl with all their favorite toppings. This recipe includes a miso broth- but if you are not a miso fan, you can just skip the miso and use chicken stock only.

Miso Broth:

  • Add 2 quarts chicken stock to a large pot and heat on medium.

  • Ladle out one cup of the warm broth and add 4 tablespoons of miso. I prefer red miso, but for a milder taste white works great.

  • Dissolve the miso paste into the warm broth, by briskly stirring with a fork or whisk.

  • Add the 1 cup with the miso back to the pot and stir.

  • Heat broth to a slow boil and simmer for 10 minutes.

  • Chop 2 green onions and add to broth and reduce broth to low heat to keep warm.

While the broth simmers, prepare all your toppings. There are SO many options- so use what you love! Here are some tasty options, with a variation of great textures:

  • Grilled Pork Loin (I used left over)

  • Tofu

  • Mushrooms

  • Roasted Corn

  • Green Onions

  • Fresh Jalapenos

  • Bean Sprouts

  • Other toppings and garnishes: Cabbage, baby corn, Edamame, bok choy, egg, cilantro, lime



Ramen Noodles:

Ramen cooks quickly, so I recommend waiting to cook it until you are ready to serve.


There are a lot of options for Ramen noodles, for extra nutrition, I Iove the Millet and Brown Rice Ramen from Lotus Foods (you can find it at Costco).


Once your noodles are ready, drain and you are ready to serve.

Now the fun part- customize your bowl with all your favorite toppings and ENJOY!

  1. In a large bowl add your noodles

  2. Add your toppings

  3. Pour miso broth over the top

  4. If you like spice, chili garlic sauce, Sriracha or chili oil are amazing with this dish!
