Pinto Beans - Refried Beans



As you have probably seen in my recipes- we love beans, and Mexican food. Beans can be used for so many things, so I make a pot usually every Sunday. It is a heart healthy (and yummy) side or component for many dishes. You can eat pinto beans whole in the broth or use to make refried beans.


They are also SUPER simple to make, especially with an InstaPot.


Insta-Pot Pinto Beans

  • Rinse a bag of dried beans

  • Add rinsed beans to InstaPot with 6 cups of liquid- I prefer using chicken or veggie stock for extra flavor, but you can use water

  • Add Salt- I usually cook with a bit of salt and then add once cooked as needed. I prefer Sea Salt.

  • Add 4 dried chilies- I use chili de arbol - this is optional, and doesn't add alot of spice but does add nice flavor

  • Set your InstaPot to bean pressure cooking setting and let cook for 25 minutes.

  • Release the steam at the end of the cook time and check for doneness. If needed, pressure cook for an additional 5-10 minutes.


  • Taste for salt and add to your taste- and you are done!

  • Serve as is, or top with avocado and/or a bit of light sour cream


Refried Beans


  • Heat a large pan and add about 1-2 tablespoons of Avocado Oil, or your favorite oil

  • Add cooked pinto beans - no liquid

  • Heat the beans and mash, adding the bean broth as needed a bit at a time till you get the desired texture. That is it- super easy and quick!
