Roasted Garlic Cauliflower Mash

This savory, creamy side is a great nutritious alternative to mashed potatoes, and is faster and easier to make, so you may never want mashed potatoes again. Plus, you gain all the nutritional benefits of cauliflower and garlic- winner!.

Prepare Cauliflower for Roasting:

  1. Wash a head of cauliflower and cut into large florets.

  2. Place on a cookie sheet

  3. Lightly coat the cauliflower with your favor cooking oil, I used avocado oil, and sprinkle with salt and pepper, and toss.


Roast Cauliflower and Garlic Cloves:

  1. Pre-heat oven to 400

  2. Add 3 cloves of garlic to the cookie sheet - Skin On.

  3. Roast your Cauliflower and Garlic in the Oven for about 15-20 minutes, turning about half way, till the cauliflower is lightly browned and tender, and the garlic is tender.

  4. Remove from Oven, and peel the garlic- it may just squeeze out! Be careful, it will be hot!

Make the mash:

1. Add your roasted cauliflower and peeled roasted garlic in a blender.

2. Add a pat of vegan or regular butter, splash of skim milk and a dollop of light sour cream.

3. Blend till creamy.

4. Add additional salt to taste if needed.

5. Chop green onion and sprinkle on top- yum!
