Shrimp Fajitas

Quick and easy meal-not to mention very tasty! Serve with your favorite sides- I love with black beans, and/or avocado, tomato and cucumber salad.

  • Pre heat a sautee pan

  • Prep and cut your veggies and herbs- I used green and sweet bell peppers, green onions and cilantro

  • Prep your shrimp- take off shells and devein

  • Add a bit of your favorite cooking oil- I used Avocado oil, to your pan

  • Add Veggies and Sautee for 1-2 min

Add Shrimp to pan, and season with lemon pepper and garlic salt and sauté

  • Add 1- small can of roasted green chilies and about 1/4 bunch of chopped cilantro

  • Squeeze 1/2 fresh lime over the top and sauté till veggies are tender and shrimp is pink and firm.

  • Your shrimp and veggies are ready- remove from heat and you are ready to serve!

I serve with nutritious tortillas- I like Ole Extreme Wellness, pickled onions or pickled jalapenos, your favorite Salsa or pico de gallo, avocado slices, and shredded cabbage. For a creamy sauce, mix fat free sour cream with your favorite hot sauce- yum!
