This is my new favorite for weekend breakfast, but really is an anytime side dish or meal. Sweet potatoes with savory green peppers, onions, and crispy kale...yummmmmmm! It is a great vitamin packed and delicious start to the day.
Serve with some eggs, your favorite sausage (for me turkey sausage), fresh fruit, avocado slices- or just as is. No surprise, I also like it with refried beans in a tortilla as a breakfast burrito. Also reheats great for any weekday leftovers for quick breakfasts!
Dice up your sweet potatoes, green pepper, kale and red/white onion. Use what you have- lots of veggies would be great in this! Kale cooks down a lot (not as drastic as spinach), so don't be shy with adding a few handfuls.
Heat a pan to medium with a bit of avocado oil, or your favorite cooking oil, about 1-2 tablespoons.
Add sweet potatoes first and sauté till they start getting a bit browned and tender. About 5-7 minutes. (If you want to speed it up a little, add just a bit of water and cover with lid to steam the sweet potatoes a bit to soften, and then take lid off and evaporate the water).
Add your green peppers, onions, and kale, and season with garlic salt and black pepper to taste, as well as add some vegan butter/butter. I used two small slices of vegan butter. (Optional)
Sauté with the sweet potatoes till tender, and kale gets a bit crispy. A little char is delicious. You are ready to serve!
If you like a bit of heat, fresh jalapenos or green chilis are excellent in this, or just top with some of your favorite salsa.
