This chicken is a personal triumph. One of my favorite restaurants, Pita Jungle, has always had the most amazing, juicy, flavorful Mediterranean flavored chicken breast, and I think this marinade is IT...and yes, tahini is the base of the marinade (Surprised me as well!). Absolutely my favorite chicken ever! Also, the chicken is great in salads, pitas, and sandwiches- so while you are it, make extra for meal prep.
Tahini Marinade:
First step is to make your marinade. Combine the following in a medium sized bowl:
1/2 cup tahini
1 small lemon, juice and zest
1/4 cup water
2 tablespoons of olive oil
Large Pinch of zaatar
Salt to taste- about 2 pinches
Black Pepper - about 2 pinches
1 tablespoon of fresh parsley
2 cloves of garlic minced
1 tablespoon of paprika (gives great color)
You want the marinade to have a thick sauce consistency to really coat the chicken breast, but if too thick, you can add a bit more water to thin out.
Add chicken breast, cut into tenders, to the marinade and toss to coat thoroughly. Cover and refrigerate. Marinate for at least 1-2 hours.
Grill Time:
Once ready to cook, pre-heat your grill to medium high, and remove the chicken from the fridge.
Once pre-heated, grill chicken on top rack, and grill till cooked through.

This time I served the chicken with this creamy cauliflower mash & a simple Greek salad- it was delicious!
For the Greek Salad, it is very simple and refreshing:
Cucumbers, Grape Tomatoes, Kalamata Olives, Garbanzo Beans & Feta
