Yogurt marinated Chicken Pitas with Greek Salad

This is a new favorite- the yogurt marinade on the chicken breast keeps it so tender and juicy- not to mention adds a ton of flavor!

  • Prep your chicken breast- I used chicken breast tenders but can easily cut whole chicken breasts into tenders. ( Note, left overs are great for a quick salad topping)

  • Season the chicken tenders with garlic salt and black pepper

Mix your marinade: ( Tweaked marinade recipe on the FAGE recipe site)

  • 1/2 Cup Nonfat Greek yogurt

  • 3 teaspoons olive oil

  • 5 peeled and finely diced garlic cloves

  • 2- Teaspoons of Paprika

  • 2- Teaspoons Fresh or dried Oregano

  • Tablespoon of Za'atar

  • 1 Lemon Zested and Juiced

Mix thoroughly and pour the marinade over the chicken tenders and let marinate for at least 30 minutes.

  • While the chicken marinates, pre-heat your grill

  • Grill your chicken on medium heat

Prep your toppings:

  • Red Onion

  • Romaine Lettuce

  • Sliced Pickles

  • Tomatoes

  • Tzatziki Sauce (Optional but so yummy!)

  • Siracha - again optional, but a little drizzle is so good!

Once your chicken is cooked through, remove from grill and you are ready to build your pitas!

I served with a greek salad of cucumbers, grape tomatoes, kalamata olives, and feta cheese.
